For web security Firebug, Paros Proxy, and burp suite are the 3 big ones. For general web developers the following add-ons are pretty nifty:
Web Developer
page speed
colorzilla
html validator
seo doctor
IE 2 tab

May sound obvious but hackbar is a good extension to have.
